What sort of standard of driving are you interested in?
Easy - I would suggest Newnes SF, glow worn tunnell, blackfellows etc or Caves to Caves trip (I've done both plenty of times and they are pretty much gravel roads- caves trip has a creek crossing or 2 and some steepish climbs so slightly more interesting)

Medium - Ben Bullen SF/ Baal Bone. 2 difficult sections and the rest is easy.

Difficult - Mt Walker/Lake Lyell. Some rocky climbs and long river crossings.

Those are all west and mostly driving trips with not heaps of scenery. As I've said I'm not a fan of Watagans in the north.
To the South there is Meryla SF (near Moss Vale) which includes Gunrock Creek FT and a few cool waterfalls. Driving would be easy to medium I would think (it's been a while). Possibly some ruts and rocky sections. Definitely a more scenic area due to the waterfalls.

Edit: Meryla would be my suggestion the more I think about it. There's easy driving to scenic areas which will keep those in stock vehicles entertained and there's some more challenging stuff like rock steps to keep the modified brigade entertained.

If you get down there look out for an old coal mine.
Supposed to go in for a couple hundred metres.
Bit of a short walk to get there but when we were there was knee deep water so didn't go in.
Waterfalls good for a look.

was down at Merayla last month, not a bad little spot, but alot of stuff I was hoping to do was locked up. Gunrock is fun with the rock step into the creek being the biggest challenge. Chicken tracks everywhere so good for all! We found a long trail leading off into the national park with some great long mud holes, but pretty overgrown and hard on the paintwork
